The spelt and oat banana bread is a rustic, tasty, moist cake, perfect for breakfast. I am not a fan of banana bread, but since it’s a classic, I made it to share with you. I must say this new version that replaces flour with spelt and oat has completely won me over. I especially liked it eaten with a scoop of Greek yogurt. I recommend trying and replicating the spelt and oat banana bread because it will become your breakfast favorite!
To prepare my banana bread, I used a mixer, which allows you to work the dough while keeping your hands free. For me, choosing the mixer was spontaneous, but it’s not always easy to choose the right appliance.

Ingredients
- 2 bananas (ripe)
- 2 eggs
- 1/4 cup sugar
- 1 1/3 tbsp rice oil (or other seed oil of choice)
- 3 3/4 tbsp oat beverage
- 3/4 cup spelt flour (or type 1 flour)
- 3/4 cup oat flour
- 1/2 packet baking powder
- 1 pinch salt
- to taste cinnamon
- 1 oz dark chocolate chips

Steps
Mash the bananas with a fork, add the eggs, sugar, rice oil (or another seed oil of choice), and oat beverage. Separately, mix the two flours, baking powder, cinnamon, and salt. Combine the egg mixture with the flours and mix to blend all the ingredients well. Pour the obtained mixture into a 10-inch greased and floured loaf pan or lined with reusable parchment paper, sprinkle dark chocolate chips on top, and bake in a preheated oven at 340°F for 45/60 minutes; it depends on the oven, so also rely on your experience with your oven. Before removing from the oven, check the doneness with a skewer. Let the banana bread cool on a cooling rack. If desired, you can slice it and serve with a scoop of plain Greek yogurt.
