Soft and delicious spelt pancakes with kefir, served hot, are the perfect weekend breakfast. They can be prepared in a few minutes, garnished with yogurt and honey, and if you like, with fresh fruit. Ingredients
- 1 1/2 cups spelt flour
- 1 cup kefir
- 1 tbsp brown sugar
- 1 tsp baking soda
- 1.7 oz oat milk
- 2 oz egg whites (or 1 egg)
- 1 tbsp rice oil (or another seed oil of your choice)
- 1 tsp vanilla extract
- 1 pinch salt
- to taste hazelnut Greek yogurt
- to taste wildflower honey (or acacia)

Steps
In a bowl, mix the flour with the sugar, salt, and baking soda, then add the kefir, oil, oat milk, and egg whites (or egg). Blend the ingredients with a whisk until you get a thick, smooth batter without lumps. Cover and let rest for ten minutes. To cook the pancakes, you can use a small pan or the special four-ring pancake pan to make them quicker. Heat the pan, spray with a little oil, and remove any excess with kitchen paper. Pour a couple of tablespoons of batter and let it cook until bubbles form on the surface, then flip the pancakes and continue cooking for another couple of minutes. Continue until the batter is finished. Serve the pancakes with hazelnut Greek yogurt or a flavor of your choice, or if you prefer, you can finish with more kefir and fresh fruit and a teaspoon of wildflower or acacia honey.
Notes
You can replace spelt flour with kamut or the classic flour 0 or 00.
