Steps
Wash the strawberries, dry them, remove the stem, and cut them into pieces. Place them inside the immersion blender and blend well to obtain a smooth and homogeneous puree.
In a bowl, weigh the flour then add the blended strawberry pulp and knead well until you get a nice smooth and homogeneous dough. Cut a portion of the dough, form a log with a thickness of two centimeters, then slice it to obtain small cylinders. If you want, you can shape the gnocchi by rolling them over the tines of a fork or using the gnocchi board.
Boil the gnocchi for a few minutes in plenty of salted water: they are ready when they float to the surface. Drain them with a slotted spoon directly into the tureen with the chosen seasoning.
Notes
These gnocchi have a nice texture, so avoid adding flour to the dough; otherwise, they will become too hard.
