This cookie recipe is by Silvia Brunzin. It’s taken from her book “La mia colazione,” which is why the doses you find below are extremely precise to the gram. No q.b., and the eggs are specified by weight.
- 1 1/4 cups all-purpose flour (w 160-180)
- 1 cup apples
- 5 tbsp butter
- 1/4 cup granulated sugar
- 1/3 cup powdered sugar
- 1/4 cup raisins (or chocolate chips)
- 1 oz whole eggs
- 1/4 cup almond flour
- 1/4 cup pine nuts
- 1/2 tsp ground cinnamon
- 1/2 tsp rum
- 1/4 tsp salt
- 1/4 tsp baking powder

Steps
In the bowl of a stand mixer with the paddle attachment, beat the softened butter with the granulated sugar and powdered sugar, cinnamon, and salt. Add the almond flour, the egg, and the rum slowly. Then add the sifted flour with the baking powder, chocolate chips (or raisins rehydrated in warm water and squeezed), pine nuts, and the apple peeled and cut into small cubes. Work the dough as little as possible, and if it becomes too sticky, let it rest in the refrigerator for a few minutes. Form balls with your hands, place them on a perforated mat or baking tray, and bake in a preheated oven at 330°F for 15/18 minutes. Let them cool before removing them from the perforated tray. Sprinkle with powdered sugar and serve.
