The summer black rice salad is a fresh and flavorful first course. Perfect to prepare in advance and enjoy at home, but great to take to the beach or picnic: light, tasty, colorful, and original. To dress the summer black rice salad, I chose zucchini, carrots, peaches, and shrimp, but you can customize it with your favorite ingredients: tuna, cherry tomatoes, arugula, avocado, olives, scallions, cubed cheese, corn. It’s a recipe that adapts to everyone, and in its infinite versions, it can become vegetarian or vegan.

Ingredients
- 4.5 oz Venere rice
- 1 zucchini
- 1 carrot
- 3.5 oz shrimp (cleaned)
- 1 peach
- 1 lime (juice)
- 2 tbsps extra virgin olive oil

Steps
Wash the zucchini, dry it, remove the ends, and cut it into sticks. Peel the carrot, remove the ends, and cut it into sticks. Transfer the carrots to the microwave steaming container and cook at 900 W for 5 minutes, then add the zucchini and continue cooking for another 6/7 minutes.
Clean the shrimp by removing the dark intestinal tract and quickly sauté them in a pan with a tablespoon of oil. Do not overcook them, or they will become tough. They will be ready when they change color: they should turn pink.
Boil the rice in plenty of salted water for the time indicated on the package, then transfer it to a bowl, dress it with a drizzle of oil, and let it cool. After the necessary time, add the vegetables, shrimp, and the peeled peach cut into cubes. Also add the lime juice. Adjust the salt. Mix gently and refrigerate until ready to serve.
Notes
Venere rice has a particular cooking method: you can find types on the market that take up to 45 minutes to cook, or like mine, which should be put in water from the start, so cold water, rice, and salt. Bring to a boil and then set the timer for the time indicated on the package, but it remains crunchy. So the recommendation is to carefully follow the package instructions.
