The agretti nests with poached eggs are an excellent second course that includes a side dish, such as the agretti, in the composition of the dish.
Besides being a very good dish, I personally find it also very nice and scenic to bring to the table, and accompanied by a nice bit of bread it is really the ideal solution for an excellent dinner.
The “difficulty” of this dish might be the preparation of the poached eggs, but if you follow my tips, I’m sure you’ll succeed on the first try.

Ingredients
- 1.1 lbs agretti
- 2 eggs
- q.b. water
- q.b. salt
- 1 tbsp vinegar
- q.b. extra virgin olive oil

Steps
To prepare the agretti nests with poached eggs, first of all, focus on cleaning the agretti.
Trim the roots at the base and rinse the stems under running water several times. Then bring a pot of salted water to a boil and blanch the agretti for 2-3 minutes, then drain them well.
In the meantime, heat a little oil in a pan and sauté a clove of garlic inside, then sauté the agretti in the pan for 3 or 4 minutes (they should not wither too much), salting them to taste and adding a sprinkle of freshly ground black pepper (optional).
At this point, focus on preparing the poached eggs.
First, bring salted water to a boil in a small pot filling it 3/4 full, add 1 tablespoon of vinegar, and as it comes to a gentle boil (not too vigorous), create a vortex with a whisk and drop in the previously cracked egg that has been placed in a small bowl.
Do not touch the egg, let the whites wrap around the yolk to form the “shirt,” and after 3 minutes of cooking, take it out with a slotted spoon and transfer it onto a sheet of paper towel.
Proceed in the same way to cook the other poached eggs.
Now all you have to do is assemble everything.
To create the agretti nest, use tongs and a soup ladle, a bit like you would with spaghetti, taking the agretti with tongs (or a fork) and rolling them inside the ladle, then gently transfer the nest to the center of the plate. Use a fork or the same tongs to widen the nest before placing the poached egg in the center.
Add a pinch of salt to the egg and a sprinkle of freshly ground black pepper (if you like) before digging into the egg with a fork and enjoying the entire preparation 😉.
Variations
You can also prepare the agretti nests with a sunny-side-up egg if you are not comfortable with poached eggs
