Colorful, fragrant, sweet, and juicy, these air fryer confit cherry tomatoes will capture your heart and you’ll make them over and over again.
To prepare them, you’ll really need just 5 minutes of your time; simply cut the cherry tomatoes (I’ve chosen different colors), and season them with extra virgin olive oil, salt, garlic, herbs, and brown sugar. The air fryer does the rest, significantly reducing cooking time compared to a traditional oven.
Confit cherry tomatoes are great for seasoning pasta, bruschetta, pizza, or even to eat on their own, almost like candy.

Ingredients
- 10.5 oz cherry tomatoes (colorful)
- 1 clove garlic
- 2 tbsps extra virgin olive oil
- to taste salt
- to taste dried oregano (and/or thyme)
- Half tbsp brown sugar (+ extra for the surface)

Steps
Preparing confit cherry tomatoes is very simple, and thanks to the use of an air fryer, the cooking time is halved.
First, soak the cherry tomatoes to wash them, then drain and dry them well with a cloth.
Cut the cherry tomatoes in half lengthwise, place them in a bowl, and start seasoning them with oil and salt.
Add the dried oregano, garlic clove, and brown sugar.
Mix well to evenly season the cherry tomatoes, then transfer them, cut side up, into the air fryer basket lined with a tray (or a simple sheet) of parchment paper.
Cook at 320°F for 20-25 minutes.
Once ready, transfer your confit cherry tomatoes to an airtight container and store them in the fridge until use 😉.
