When autumn arrives, my fruit basket inevitably fills with apples, with which I bake a different dessert at least once a week. This time, however, the recipe I’m about to give you is not the classic cake, but something even more delicious: apple fritters!
They are prepared very quickly, so they are perfect for all those occasions when you crave apple pie but don’t have the time, or simply don’t feel like making it.
Just peel and slice the apples, then dip them in a batter made of eggs, milk, flour, and baking powder, flavored with cinnamon and a dash of rum. Once fried in hot peanut oil, simply roll the warm fritters in granulated sugar mixed with cinnamon.
I intentionally made half a batch, which yielded about 8 fritters, but if you’re not on a diet like me, you can easily double the quantities.

Ingredients for 7-8 fritters
- 1 apple
- 1 egg
- 3/4 cup all-purpose flour
- 1/2 shot glass rum (or 1 vial of rum flavoring)
- 1 packet vanillin
- 2 tbsp granulated sugar (+ extra for topping)
- 1/3 cup milk
- to taste ground cinnamon
- 2 tsp baking powder
- 1 pinch fine salt
- peanut oil (for frying)

Steps
To prepare the apple fritters, first wash and peel the whole apples.
Use an apple corer to remove the central part, then slice the apple into half-inch thick slices. If you don’t have an apple corer, slice the apple first and then, using a plastic cap, remove the central part.
The batter is easy to prepare, so there’s no need to soak the apples in lemon juice, but feel free to do so if you prefer.
In a bowl, combine the egg and sugar.
Use a hand whisk to mix the two ingredients until the egg becomes lighter and foamy.
Then add the sifted flour along with the vanillin and baking powder, and incorporate it into the mixture along with the milk, continuing to mix.
Once all the ingredients are perfectly combined, add the rum,
the cinnamon, and a pinch of salt. Give it one final mix to evenly distribute the flavors throughout the batter.
Now dip the apple slices in the batter, making sure both sides are coated, let the excess batter drip off, then fry in plenty of peanut oil (for this, I suggest using a saucepan with high sides rather than a frying pan) that you’ve heated to 340°F. Let the fritters brown on both sides, turning them with tongs.
