Bologna Mousse

The Bologna mousse is an incredibly tasty savory cream, perfect for garnishing savory pies and appetizers for your aperitifs or buffet parties, but I assure you, it is also delicious when eaten by the spoonful.

It can be prepared in a very short time with the help of a food processor to gather all the ingredients, then you just need to blend until you get a smooth and fluffy cream.

Ingredients

  • 4.4 oz ricotta
  • 8.8 oz bologna
  • 0.42 cup fresh liquid cream
  • 2 tablespoons grated Parmesan
  • 1 pinch salt
  • to taste chopped pistachios (for garnishing)

Steps

  • Preparing the Bologna mousse is really childproof, it can be prepared in just a few minutes and all you need is a mixer.

    First of all, let the ricotta drain well in a strainer and once well dried, collect it in the mixer bowl.

  • Then cut the bologna into chunks (or strips if you are using slices) and place it in the mixer and start blending.

    After a few seconds, when the bologna is minced and mixed with the ricotta, also add the cold fresh cream from the fridge, Parmesan, and a pinch of salt.

    Turn the mixer on again and continue blending until you get a smooth, homogeneous, and fluffy cream.

    Then transfer the Bologna mousse into a bowl, garnish it with chopped pistachios, and store it in the fridge until ready to use 😉.

Storage

Bologna mousse can be stored in the fridge for up to 2 days in a well-sealed container.
