I mean no offense to the big fast-food chains, but I prefer to make hamburgers myself, carefully choosing the ingredients to use, but especially preparing the burger buns at home, which are the characteristic buns usually used for this type of preparation.
These soft buns, decorated on the surface with a myriad of sesame seeds, lend themselves to being stuffed in a thousand different ways, although at home we prefer the classic grilled meat hamburger.
Making them at home always gives me great satisfaction, moreover, it allows me to please the little ones in the house who would live on cheeseburgers and fries alone.
Now take a minute to read the recipe and then… let’s cook and eat!!

Ingredients
- 3 3/4 cups all-purpose flour
- 1 egg
- 2 tsp instant yeast (or 15 g of fresh yeast)
- 2 tbsp butter (softened)
- 1/4 cup sugar
- 3/4 cup water
- 1 tsp salt
- 1 egg yolk
- 1 tbsp milk
- to taste sesame seeds
Tools
- 1 Stand Mixer
- 1 Bowl
- 1 Plastic Wrap
- 1 Work Surface
- 1 Metal Scraper
- 1 Baking Tray
- 1 Parchment Paper
- 1 Brush silicone
- 1 Wire Rack
Steps
To prepare the burger buns, gather the flour, yeast, sugar, egg, and softened butter in the bowl of the stand mixer.
Start mixing with the paddle attachment (or “K” hook), gradually adding the water, and finally the salt.
When the dough starts to come together, switch the paddle to the dough hook and continue kneading until the dough is smooth and elastic.
Then transfer the dough to a bowl, cover with plastic wrap, and let it rise until doubled in size.
After the first rise, transfer to a floured work surface, punch down the dough, form it into a log, and divide it into 6 equal pieces (about 4.5 oz each).
Shape each piece into a round ball (as shown in the video) and place them on a parchment-lined baking tray, covered, for another hour to rise.
After the second rise, brush the tops of the burger buns with a mixture of egg yolk and milk, and sprinkle with sesame seeds.
NOTES
As with all leavened doughs, rising times vary depending on the amount of yeast used and the external temperatures.
Once baked and cooled, you can freeze the burger buns and consume them within 2 months
