Light Pearl Barley Salad

Often when we prepare cold pasta or rice salads, we believe we are preparing, in addition to a fresh dish, a light meal.

Unfortunately, this is not always true because many times we tend to enrich these dishes with many ingredients that, with their caloric content, make the dish not at all dietary. Delicious in taste but really not light at all.

I have found in this pearl barley salad the right compromise between taste, freshness, and lightness.

The ingredients I enrich the pearl barley with are essentially three and low in calories, such as turkey breast, green beans, and primosale cheese.

It is prepared in little time and is perfect even for a lunch under the umbrella.

Ingredients

  • 10 oz pearl barley
  • 10.5 oz green beans
  • 9 oz turkey breast (in cubes)
  • 9 oz primosale cheese
  • to taste extra virgin olive oil
  • to taste fine salt
  • A few leaves basil

Steps

  • To prepare the pearl barley salad, start by cooking the pearl barley in salted water, following the directions on the package. Mine cooks in 20 minutes starting from cold water.

    While the pearl barley is cooking, wash and trim the green beans, then cook them in salted water until they are tender.

  • When the barley is cooked, drain it and let it cool in the colander.

    In the meantime, prepare the dressing by cutting the turkey breast into chunks (I often use turkey pieces that I find at the supermarket, which are vacuum-packed), the primosale cheese, and the green beans, and collect them in a large bowl.

    Drizzle with extra virgin olive oil, season with salt, and flavor with some fresh basil leaves.

    At this point, also add the pearl barley, mix well to combine the flavors, and then decide whether to serve the light pearl barley salad at room temperature or cold. In the latter case, place the bowl in the fridge for a few hours and before serving, add a bit of olive oil😉.
