The pasta with tenerumi is a typical recipe of Sicilian cuisine, a first course that can be enjoyed as soup, therefore more brothy, or as dry pasta.
As a lover of soups, I’m offering you the soup version with the addition of broken spaghetti (by hand).
Its preparation is very simple and requires few ingredients such as tenerumi, which are the leaves of the long zucchini (so called for their soft and velvety texture), vine tomatoes, salt, oil, pepper, and of course, pasta.
Many people also add the long zucchini cut into pieces to the preparation, which I couldn’t find at the market.

Ingredients
- 2 cloves garlic
- 1 bunch tenerumi
- 3 vine tomatoes
- to taste extra virgin olive oil
- to taste salt
- to taste black pepper (ground)
- 9 oz spaghetti (broken by hand)

Steps
First, prepare the “picchi pacchiu,” which is the base sauce for this soup.
Wash and score the base of the tomatoes with a cross, then blanch them for a few seconds in boiling water. This operation will facilitate the removal of the tomato skins.
Once the skin is removed, also remove the seeds and chop the tomatoes into pieces.
In a pan, add a base of oil and let two cloves of garlic brown, which you can put whole to remove later or, as I did, chop them and let them dissolve inside the soup.
Then add the tomatoes, salt, pepper, and let them cook for a few minutes.
In the meantime, select the tenderest leaves of the long zucchini (the tenerumi), wash them well, and cut them into small pieces.
When the tomato is flavored and softened, add the tenerumi and water to just cover. Let it cook for 30 minutes with the lid on.
When the tenerumi are completely wilted, add a little more hot water and pour the hand-broken spaghetti into the pan, bringing it to cook, stirring the soup with a wooden spoon. Add a little hot water at a time, if necessary.
Finally, adjust the salt and pepper and serve with grated cheese if you like 😉.
