- 1 egg yolk (for the surface)

Steps
The recipe for the puff pastry star with escarole requires that the escarole is already cooked Neapolitan style. HERE you will find the instructions to prepare them.
Once the escarole is cooked, the rest of the recipe will only take a few minutes, and in half an hour, including oven cooking, you will bring this delicacy to the table.
First, roll out the round puff pastry without removing the parchment paper that wraps it.
Make 8 cuts, without reaching the center, and place a little escarole on each puff pastry wedge.
Then fold the edges of the puff pastry as shown in the photo.
Once all the points of the puff pastry star are created, make cuts at the center, bringing the flaps outward and placing them between one point and another of the star.
This way, you will create “pockets” of dough filled with escarole.
Brush the surface of the puff pastry with a beaten egg yolk and sprinkle it with sesame seeds.
Using the parchment paper underneath, transfer the puff pastry star with escarole onto a baking tray.
Storage
It is recommended to consume the puff pastry star with escarole as soon as it’s ready to best appreciate its crispness. However, it can be stored in the refrigerator for a couple of days well-closed in an airtight container.
Tips
For an even more delicious version, you can add some mozzarella or cheese chunks to the preparation.
