Smacafam

The smacafam, literally “hunger chaser”, is a rustic pie typical of Trentino-Alto Adige that is prepared during the carnival period, similar to how the savory migliaccio is prepared in Naples.

Smacafam is very simple and quick to prepare as it requires no resting or rising time, being completely yeast-free.

The necessary ingredients are just eggs, milk, flour, fresh sausage like luganega, and, of course, the essential salt and pepper to enhance the flavors.

Smacafam is perfect to serve as an appetizer or to enrich a carnival party buffet.

Ingredients

  • 3 cups all-purpose flour
  • 2 eggs
  • 2 cups milk
  • 1 tsp salt
  • to taste black pepper (ground)
  • 7 oz sausage (luganega)

  • 1 Bowl

  • 1 Sieve
  • 1 Parchment paper
  • 1 Baking pan 8×12 inches

Steps

  • To prepare the smacafam, you will need just a few minutes, few ingredients, and no special equipment for mixing.

  • In a large bowl, break the eggs, lightly beat them with a whisk, then add the milk while continuing to stir.

  • Then add the flour gradually, previously sieved, and mix it well to avoid lumps. Once you have a smooth and homogeneous mixture, add the salt and pepper.

  • At this point, remove the casing from the sausage, crumble it, and add half of it to the batter. Mix it well before pouring the batter into a baking pan (8×12 inches) lined with parchment paper.

  • Finish by adding the remaining sausage on top.
    Bake your smacafam in a preheated fan oven at 350°F for 30 minutes, then turn on the grill for about 5 minutes to brown the surface.
    Once out of the oven, let it cool on a rack before cutting it into cubes and serving it 😉.
