Spaghetti Squash Fritters. Autumn is known as the squash season, with its many varieties including the “spaghetti squash,” which I hadn’t heard of until a few weeks ago. It’s a particular type of squash with an oblong shape and yellow skin, but the peculiarity lies in its flesh, which, when scraped with a fork, creates numerous strands resembling spaghetti.
It was my aunts who introduced it to me, and they procured one for me from Cilento that arrived straight at my home.
I surfed the web a bit to find some recipes, but I didn’t find many, also because this type of squash is not easily available.
Anyway, after baking it and getting the famous “spaghetti,” the idea came naturally: Spaghetti Squash Fritters.
It just took adding cooked squash strands, eggs, flour, milk, and a pinch of instant yeast, seasoned with salt, pepper, and speck strips.
Once the mixture was ready, I cooked the fritters in a pan with vegetable oil.

Ingredients
- 7 oz spaghetti squash (already cooked)
- 2 eggs (small)
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons milk
- 3/4 cup flour
- 1 teaspoon instant yeast for savory preparations
- to taste salt
- to taste pepper
- 1.75 oz speck (cut into strips)
- to taste vegetable oil (for frying)
- to taste extra virgin olive oil

- 1 parchment paper
- 1 Bowl
- 1 Frying pan
Steps
To prepare the spaghetti squash fritters, first, cut the squash in half lengthwise and clean out the internal fibers and seeds.
Season both halves of the squash with oil, salt, and pepper, place them on a tray lined with parchment paper with the cut side facing down, and bake in a preheated static oven at 350°F for 35-40 minutes.
Once out of the oven, being careful not to burn yourself, scrape the squash flesh with a fork and you will see numerous strands form that resemble spaghetti. Gather them inside a bowl along with all other ingredients: eggs, milk, cheese, speck, sifted flour, and yeast, and finally, salt and pepper.
Mix well to combine everything and proceed immediately to fry the fritters.
Cover the bottom of a pan with vegetable oil and heat it, then take a spoonful of batter at a time and drop it into the oil. Cook the fritters for 3-4 minutes, turning them as soon as the first side is golden.
Once ready, place your spaghetti squash fritters on a paper towel to remove excess oil and serve them hot.
