Sweet potato fries are a delicious and irresistible alternative to the more classic french fries, with a sweet and sour taste that I personally love to season with a blend of aromatic herbs and then accompany with aioli sauce.
That’s exactly how I had them for the first time this summer in Valencia, and once I returned home, driven by the persistent requests of my girls, I wanted to make them again, and the result was definitely excellent.

Ingredients
- 2 sweet potatoes
- as needed peanut oil
- A few leaves sage
- as needed rosemary (fresh)
- as needed coarse salt
- aioli sauce
Tools
- 1 Potato Peeler
- 1 Chopper
- 1 Knife
- 1 Pan
- 1 Skimmer
- 1 Plastic Stick strainer
Steps
To prepare the sweet potato fries, first, wash and dry the potatoes thoroughly, then peel them with a potato peeler.
If they are very long, I recommend cutting them in half widthwise, then into slices, and finally into sticks about 1/2 inch thick. Meanwhile, heat the oil in a pan.
When the oil reaches a temperature of 340°F, start frying a few potatoes at a time until golden brown. As they are ready, remove them with a skimmer and transfer them to a strainer.
Finally, prepare the mix of aromatic herbs by putting a few sage leaves and rosemary needles with the coarse salt into a chopper. When you have obtained a fairly fine powder, transfer the sweet potato fries to a bowl and season them with the aromatic mix, mixing well to flavor them evenly.
Serve your sweet potato fries accompanied by aioli sauce or your favorite sauce😉.
