How to prepare Apple Plumcake
Let’s start preparing the Apple Plumcake, peel the apple, cut it into 4 parts and remove the core,
cut a quarter of the apple into thin slices and then in half,
the other 3 parts cut into small pieces.
Pour the eggs and sugar into a bowl,
beat with an electric whisk to get a light and fluffy mixture,
then add the milk and let it incorporate.
Add the grated zest of a lemon,
the sifted baking powder,
and the flour, also sifted,
add also a packet of vanillin or vanilla essence,
incorporate with a fork and with movements from top to bottom so as not to deflate the mixture.
When you have a creamy and lump-free mixture, add the diced apples
and incorporate them into the mixture,
then pour it into the loaf pan lined with parchment paper and level it,
add the apple slices and bake in a preheated static oven at 350°F for 50 minutes, before removing it do the toothpick test to check the cooking if necessary continue cooking for a few more minutes.
Once cooked, remove the plumcake from the oven, let it cool and then sprinkle with powdered sugar.
