Ingredients for preparing the Autumn Lasagna

  • 21 oz champignon mushrooms
  • 18 oz pumpkin
  • 9 oz lasagna
  • 1 clove garlic
  • to taste parsley
  • to taste salt
  • to taste extra virgin olive oil
  • 1.75 oz onion
  • béchamel sauce
  • to taste grated cheese

How to prepare the autumn lasagna

  • Let’s start preparing the autumn lasagna. Peel the pumpkin, remove the seeds, cut it into small pieces, and put it in a pot. Finely chop the onion and add it to the pumpkin, along with chopped parsley, a pinch of salt, and a splash of water. Put on the stove and cook for 15 minutes, stirring occasionally to ensure even cooking. At the end of cooking, part of the pumpkin will be in cubes, and part will become a cream.

  • Clean the mushrooms by removing the end part, rinse them quickly under running water and cut them into small pieces. Place them in a pan, add the garlic clove, chopped parsley, and cook for 20 minutes, stirring occasionally. At the end of cooking, adjust the salt and remove the garlic clove.

  • Prepare the béchamel sauce following my recipe. Pour a few tablespoons of béchamel into the baking dish, make a layer with the lasagna, add some pumpkin béchamel, mushrooms, and grated cheese. Continue this way until all the ingredients are used. Bake in a preheated static oven at 350°F for 30 minutes.
