Ingredients to prepare avocado and tuna pasta
- 10 oz pasta
- 1 avocado
- Half lemon
- 10 cherry tomatoes
- to taste salt
- to taste extra virgin olive oil
- 7 oz canned tuna in oil
- to taste chives
How to prepare avocado and tuna pasta
Let’s start preparing the avocado and tuna pasta, squeeze the juice of half a lemon and set it aside. Pour some water into a pot, salt it, and put it on the stove. When it starts to boil, add the pasta and cook it according to the package instructions until al dente. Once cooked, drain it and cool it under cold water.
Cut the avocado in half lengthwise, open it, and remove the central pit
and its skin.
Place it on a flat plate and mash it
add some salt
some extra virgin olive oil
and half of the lemon juice
mix well until you get a creamy consistency.
wash the cherry tomatoes and cut them into small pieces.
Pour the cold pasta into a bowl, add some extra virgin olive oil
and the avocado cream, add in two rounds so that the cream mixes well with the pasta.
Add the tuna after removing its oil, mix well
add the chopped cherry tomatoes
the remaining lemon juice
a drizzle of oil
and some chives.
Let it rest in the fridge for at least half an hour to allow it to become more flavorful and cool further, then serve the avocado and tuna pasta
