Baked chicken meatloaf is a main course that is very easy to make, tasty and very soft. It is also delicious served at room temperature during the summer season, for example with mayonnaise. Ingredients

  • 0.66 lb chicken breast
  • 1 cup ricotta
  • 2/3 cup breadcrumbs
  • 3.5 oz speck
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste salt

How to make the Baked Chicken Meatloaf

  • Let’s start preparing the baked chicken meatloaf: remove any fat and small bones from the chicken breast and cut it into pieces.

  • Put the chicken pieces, the ricotta, a pinch of salt, the breadcrumbs and the parsley into the blender. Blend everything until you obtain a creamy mixture and the chicken is completely processed with no pieces remaining, then transfer the chicken mixture to a bowl.

  • Drain the mushrooms from their oil, add the mushrooms to the bowl with the chicken and mix so the mushrooms are incorporated into the chicken cream.

  • Take a sheet of parchment paper and lay it on the work surface, pour the meat mixture onto it and shape the meatloaf. Arrange the slices of speck on the parchment paper, side by side, slightly overlapping.

  • Place the meatloaf in the center and roll it up with the speck, close the meatloaf in the parchment paper and tighten well, twist the ends like a candy wrapper and place it on a baking tray.

  • Bake in a preheated conventional oven at 356°F for 40 minutes. Once cooked, remove from the oven, cut into slices about 3/8 inch thick and serve with the cooking juices or with extra virgin olive oil.
