Ingredients to prepare baked peppers and onions

  • 1 onion
  • 1 red bell pepper
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

How to prepare baked peppers and onions

  • Let’s start preparing the baked peppers and onions. Clean the onion and cut it into pieces, also clean the bell pepper, remove the stem, seeds, and internal filaments, then wash it and cut it into strips.

  • Preheat the static oven to 356°F (180°C) so it has time to reach temperature. Arrange the vegetables in a baking tray, add a few tablespoons of extra virgin olive oil, some salt, and pepper, mix with a fork to season the vegetables well, then spread them across the tray.

  • When the oven is hot, place the tray in the oven and bake for 40 minutes, occasionally opening the oven and stirring the vegetables.

  • Once cooked, remove the tray from the oven, adjust the salt, and serve the baked peppers and onions hot

Store them in the refrigerator for 2/3 days
