How to make baked radicchio with bacon
Let’s start preparing baked radicchio with bacon. Clean the radicchio, remove the damaged outer leaves, and wash it thoroughly under running water.
Remove the final part of the root and cut each head in half, and if it is large, cut each half into two parts.
Wrap the radicchio with one or two slices of bacon depending on the size and place the radicchio with bacon in the baking tray.
Cut the cheese into small pieces or grate it with a coarse grater and place it on top of the bacon. Sprinkle with pepper and add a drizzle of oil on the leaves; you can also brush them, this way they will not dry out too much.
Bake in a preheated static oven at 355°F for 20 minutes. If you see it getting too dry, cover the tray with aluminum foil.
When cooked, take it out of the oven and serve it hot.
