- 1 round eggplant
- smoked scamorza cheese (or other stringy cheese)
- 2 eggs
- breadcrumbs
- salt
- 3.5 oz cooked ham

How to prepare Eggplant in a Carriage
Let’s start preparing the eggplant in a carriage by cleaning the eggplant, removing the stem part, washing it well, and cutting it into slices about 1/4 inch thick. Cut the stringy cheese, or smoked scamorza or mozzarella into slices and set aside.
Crack the eggs into a shallow plate and beat them with a fork, adding a pinch of salt and pepper. Pour some breadcrumbs onto a flat plate.
Turn on the fan oven to 356°F and line the baking tray with parchment paper.
Take a slice of eggplant, place the cheese and ham in the center, and close with another slice of eggplant. Now pass through the egg, then the breadcrumbs, and again egg and breadcrumbs, press well and place on the oven tray.
Continue in this way until all ingredients are used. Add a drizzle of oil and when the oven is hot, bake and cook for 20 minutes, turning the eggplant in a carriage halfway through.
If you wish, you can also fry them instead of baking, using peanut oil.
