BAKED ZUCCHINI FRITTATA

  • 3.5 oz cooked ham
  • 2.8 oz scamorza cheese (or other string cheese)
  • 1 zucchini

How to make the baked zucchini frittata

  • Let’s start preparing the Baked Zucchini Frittata, grate the zucchini using a large-hole grater,

  • squeeze it well to remove excess water.

  • Cut the cheese into cubes

  • and the cooked ham.

  • Pour the eggs into a bowl, add some salt, pepper, and a splash of extra virgin olive oil,

  • and the cheese cubes,

  • mix well to combine the ingredients.

  • Grease the pan, in my case the muffin pan, but you can also use a single-serving pan suitable for baking.

  • pour the mixture into the pan and bake in a preheated static oven at 350°F for 15 minutes, you will see the frittatas puff up a lot, then once you remove the pan from the oven, they will deflate on their own.
