How to Prepare Beans, Sausage, and Mushroom Soup
Let’s start preparing the Beans, Sausage, and Mushroom Soup. First, pour the beans into a bowl, cover them with cold water, and let them soak for about 12 hours, typically overnight. The time may vary based on the type of bean, so I recommend following the time indicated on the package.
After soaking, drain the beans from the soaking water and rinse them under running water. Then place them in a large pot, add the onion cut into coarse pieces, also add the mixed mushrooms and the bay leaf, and mix well.
Remove the casing from the sausage and crumble it into the pot. Peel the potato, wash it, cut it into pieces, and place it in the pot. Cover with plenty of water, add 1 tablespoon of extra virgin olive oil, and put on the heat. Cook for 1 hour, stirring occasionally.
If necessary, add more water and bring to cooking. The cooking time may vary depending on the type of bean and the soaking time of the beans, the longer you soak them the less you will have to cook them. Before removing the pot from the heat, check the cooking of the beans. Once cooked, adjust the salt and serve the soup hot, accompanied by bread.
