How to make broccoli in a pressure cooker

  • Let’s start preparing broccoli in a pressure cooker: clean the broccoli, remove any outer leaves, wash it and divide it into florets, preferably all the same size so they cook evenly.

  • Pour about one finger of water into the pot and place the steaming basket; keep in mind that the water must not come out through the holes of the basket.

  • Place the basket in the pressure cooker and arrange the broccoli florets. Close the pressure cooker with its lid and put it over high heat until the cooker starts to whistle.

  • Once the cooker is pressurized, lower the heat and cook for 5 minutes.

  • When the broccoli is cooked, turn off the heat and let the cooker release the steam; when it is no longer pressurized, open the lid and check the doneness by inserting the tines of a fork — if still firm, continue cooking for another 1–2 minutes.

  • Once the broccoli is cooked, remove it from the pressure cooker basket and season with extra virgin olive oil, salt and pepper, or use it to prepare the recipe you prefer.

How to store pressure-cooked broccoli

Store it in the refrigerator for 2–3 days or you can also freeze it.
