  • 1 cup cups Carrots
  • 1/2 cup cups Sugar
  • 1.75 oz oz Peeled almonds
  • 1 cup cups Flour
  • 2 Eggs
  • 1/4 cup cups Sunflower oil
  • 1 packet Cream of tartar (or baking powder)

How to make Carrot Muffins

  • Let’s start preparing the Carrot and Almond Muffins by cleaning the carrots, removing the ends, and peeling the outer part of the carrots before grating them. Blend the carrots with the almonds and sugar slightly.

  • Pour the sifted flour and cream of tartar into a bowl, add oil, eggs, and grated lemon peel, mix everything, and then add the almonds with sugar and carrots. Preheat the oven to 350°F.

  • Fill the muffin liners placed in the muffin tray with the batter up to 3/4 full. If you don’t have a muffin tray, place the liners directly on the oven tray, or if you don’t have liners, pour the batter onto a slightly greased and floured muffin tray.

  • When the oven is hot and has reached the right temperature, bake the carrot and almond muffins and let them bake for 30 minutes. Use the toothpick test to check if they are done; if the toothpick is still wet, continue baking for a few more minutes. Once cooked, remove the Carrot and Almond Muffins and let them cool.
