Cheese dumplings, an economical and delicious dish, are made with just a few simple ingredients, primarily using stale bread you have in your pantry, a true recycling recipe. Once you’ve cooked the dumplings in broth, simply dress them with butter and a sprinkle of cheese, and if you like, chives, and they are ready to be served. You can also prepare these vegetarian dumplings hours in advance and leave them in their broth so they remain soft and even more flavorful. They’re even more delicious the next day, just reheat and serve. I also recommend trying the DUMPLINGS IN BROTH, very tasty and flavorful. Now let’s see how to make cheese dumplings and if you try them, let me know. Barbara

How to prepare cheese dumplings

  • Let’s start preparing the cheese dumplings. First, prepare the broth by pouring water, cleaned vegetables, carrots, celery, and onion into a pot and boiling for at least 30 minutes, then season with salt.

  • Cut the stale bread into small pieces, then place it in a bowl and add milk. Stir and let it rest, stirring occasionally so the bread absorbs the milk well and becomes very soft.

  • Crack the eggs into a bowl and whisk with a fork. Cut the cheese into cubes, which will be inserted into the dough to create a gooey center.

  • Take the now soft and well-soaked bread and work it with your hands to obtain a compact mixture. Add the beaten eggs, flour, a pinch of salt, and the melted butter. Mix well to incorporate all ingredients, then let rest for 10 minutes.

  • After resting, take the dumpling dough and form balls weighing about 1.8 oz each. Place a piece of fontina in the center of each dumpling and reshape into balls.

  • Remove the vegetables from the vegetable broth. Add the dumplings a few at a time and cook for 10 minutes. When cooked, remove them from the broth and place them on the plate, serving with melted butter, grated fontina cheese, and chives if desired.

How to store cheese dumplings

You can store cheese dumplings in the refrigerator for 2 days, preferably leaving them in their broth to maintain softness.
