- 1 chicken breast (about 8 oz/225 g)
- 600 g mixed mushrooms (about 21 oz / 1.3 lb)
- 1 clove garlic
- to taste parsley
- to taste extra virgin olive oil
How to make chicken bites with mushrooms
Let’s start preparing the chicken bites with mushrooms: remove any fatty parts and any small bones from the chicken breast and then cut it into bite-sized pieces.
Clean the mushrooms and cut the larger ones into pieces. Put the garlic clove, some extra virgin olive oil and the mushrooms in a pan, then add the chicken bites and place over the heat. Cook with the lid on for about ten minutes, stirring occasionally.
Season with salt, add chopped parsley and continue cooking for another 10 minutes, or until the chicken is fully cooked.
Serve the chicken bites with mushrooms hot.
How to store chicken bites with mushrooms
Store them in the refrigerator for 2 days or you can freeze them for several months.
