I usually don’t add tomato when making the broth, but if you like, you can add a few cherry tomatoes.   • 2 quarts water
  • 2 carrots

How to prepare Chicken Breast Broth

  • Let’s start preparing homemade chicken breast broth. Clean the carrots, remove the outer part with a vegetable peeler, or scrape them with a knife, and remove the ends. Clean the onion and cut it in half, also clean the celery stalks, remove the leaves and any tougher strings, and trim a few sprigs of parsley. Once you have cleaned everything, wash all the vegetables well under running water.

  • Place the vegetables in a pot, add the chicken breast (or optionally the chicken thighs), and cover with 2 quarts of water. Set on the stove and bring to a boil. When the water starts boiling, lower the heat and let it simmer for about 1 hour. At the end of cooking, remove from heat, adjust the salt, and strain the broth to remove the vegetables and chicken. You can extend the vegetable broth and use it as you prefer.

  • After cleaning the vegetables as described previously, place them in the pressure cooker, add the chicken breast and water, close the lid, and set on high heat. As soon as you hear the whistle, reduce the heat and cook for 30 minutes.

  • After the cooking time, turn off the heat, let the steam release, and when the safety valve lowers, open the pot and adjust the salt. Strain the broth, removing the vegetables and chicken breast, and use the broth as you prefer.

How to store Chicken Breast Broth

Store the chicken broth in the refrigerator for a week, or you can freeze it. I store it in the freezer inside half-liter plastic bottles. When needed, I thaw it at room temperature or in the refrigerator if I have more time. Alternatively, you can freeze it in ice cube bags.
