  • 1 1/3 lbs mixed mushrooms
  • 1 clove garlic
  • to taste parsley
  • to taste extra virgin olive oil
  • 1 3/4 lbs ground chicken
  • 1 egg
  • 4 tbsp breadcrumbs

How to make Chicken Meatballs with Mushrooms

  • Let’s start preparing the chicken meatballs with mushrooms: clean the mushrooms and cut them into pieces.

  • Place the ground meat in a bowl, add the egg, some salt, chopped parsley and the breadcrumbs, mix well so all the ingredients are well combined.

  • Take portions of the mixture and form slightly flattened meatballs. Pour some extra virgin olive oil into a pan, add the garlic clove and place over the heat, add the meatballs and brown them well on both sides.

  • When the meatballs are browned, add the mushrooms, sprinkle with parsley, adjust the salt and cook covered for 20 minutes, stirring the mushrooms and turning the meatballs from time to time.

  • Serve the meatballs piping hot accompanied by the mushrooms.
