Ingredients to make chicken rolls with spinach

  • 9 oz spinach
  • 6 slices chicken breast
  • as needed extra virgin olive oil
  • 3 slices smoked scamorza
  • as needed mozzarella for pizza (or other stringy cheese)
  • as needed breadcrumbs
  • as needed salt
  • as needed extra virgin olive oil
  • as needed pepper

How to make chicken rolls with spinach

  • Start preparing the Chicken rolls with spinach by pouring some extra virgin olive oil into a large pan,

  • add the spinach, cover with a lid, and set over low heat, stirring occasionally, and let cook for 5 minutes,

  • then remove the lid and continue cooking until all the liquid that has formed has completely evaporated. When the spinach is ready, remove from heat and allow to cool.

  • Take a slice of chicken breast and add the spinach,

  • some smoked provola

  • and a piece of mozzarella for pizza,

  • roll up starting from where you placed the piece of mozzarella

  • and coat the roll in breadcrumbs, proceed this way with all the chicken breast slices.

  • Place the rolls in a baking dish suitable for oven cooking, season with salt

  • add extra virgin olive oil and

  • pepper, bake in a preheated static oven at 350°F for 20/25 minutes, the cooking time may vary depending on the thickness of the chicken breast slices.

  • Serve the gratinated chicken rolls hot.

  • After preparing the chicken rolls, place them in a tray that fits into your air fryer basket, spray with extra virgin oil, and cook in the air fryer at 375°F for 10 minutes, open the air fryer basket, turn the rolls, and cook again at 375°F for another 5 minutes, open the air fryer basket, remove the tray and serve the rolls hot.
