CHICKPEAS WITH ROSEMARY

Chickpeas with rosemary is a tasty and simple side dish to make, in this way you will have a simple and flavorful dish. For convenience, I soak the chickpeas the night before so they have all night to soak and can be used the next day.   • 7 oz dried chickpeas
  • to taste rosemary

How to prepare chickpeas with rosemary

  • Let’s start preparing chickpeas with rosemary. Soak the chickpeas in cold water for 10/12 hours, I do it at night so they have all night to soak

  • After soaking, drain the chickpeas and proceed with cooking, which can be done either in a pressure cooker or a traditional pot. Pour the water into a pot, add the chickpeas, and cook for 40 minutes, then add the salt and mix, let it rest for a couple of minutes.

  • If cooking the chickpeas in a pressure cooker, pour the chickpeas and water into the pressure cooker, close the lid, put on maximum heat, and when it whistles, lower to minimum. From that moment, cook for 20 minutes. After 20 minutes, turn off the heat, let the pressure release, and when the pot is no longer pressurized, open the lid, add the salt, and mix. Let it rest for a couple of minutes.

  • Pour extra virgin olive oil into a pan, add the rosemary sprigs and the garlic clove, and let it infuse, then drain the chickpeas and add them to the pan. Let them infuse for 5 minutes, stirring so they absorb the flavors well.

  • Serve the chickpeas with rosemary hot
