  • 1 bell pepper (I use red)
  • 1 chicken breast
  • to taste extra virgin olive oil
  • to taste salt
  • 1 1/4 cups couscous
  • 1 1/8 cups water
  • 1 sprig rosemary

How to prepare cous cous chicken and peppers

  • Let’s start preparing cous cous chicken and peppers. Cook the bell pepper, I cook it in the air fryer, alternatively you can cook it in the oven or on the grill.

  • Place the bell pepper in the air fryer basket and cook at 392°F for 30 minutes. Once it’s cooked, turn off the air fryer and let the pepper rest inside for 15/20 minutes, this will make peeling it easier.

  • Remove the top part of the stem, open the pepper and remove the inner seeds using a fork or spoon, just scrape them gently. Also remove the skin by lifting it gently with your hands, then cut it into strips and place it in a bowl.

  • Cook the cous cous by pouring water into a pot, adding a pinch of salt, and bringing it to a boil. Once boiling, pour in the cous cous and turn off the heat, let it rest for the time indicated on the package, then fluff it with a fork and add it to the bowl with the peppers.

  • Pour some extra virgin olive oil and a sprig of rosemary into a pan, heat for a few minutes to flavor, then add the chicken breast slices and cook them well until golden on both sides.

  • Cut the chicken breast into pieces and add them to the bowl with peppers and cous cous, add more extra virgin olive oil and mix everything well.

  • Serve hot or at room temperature.
