Let’s start preparing the cream of onions and potatoes. Peel the potatoes and cut them into pieces, clean the onion and cut it into pieces as well.
Place the potato pieces and onion in a pot, add the water, a drizzle of extra virgin olive oil, and some salt, put it on the stove, and cook for 30 minutes.
Pour the cornstarch into a glass with some water, stir to dissolve the cornstarch, then pour it into the pot with the potatoes and onion. Blend with an immersion blender to obtain a cream, put it back on the stove for another 5 minutes, and keep stirring to prevent it from sticking to the bottom.
