- 6 slices bread
- 100 g spreadable cheese (such as Philadelphia)
- 1 zucchini
- 12 cherry tomatoes
- 1 clove garlic
- to taste parsley
- to taste salt
- to taste extra virgin olive oil

How to prepare crostini with zucchini
Let’s start preparing the crostini with zucchini. Wash the zucchini and trim it, then cut it into slices and pieces, clean the garlic clove and cut it in half, also clean the parsley and chop it finely.
Pour into a pan, the garlic clove, the extra virgin olive oil, and the zucchini pieces, add a pinch of salt, the chopped parsley, put on the fire, and cook over low heat for 15 minutes, stirring occasionally. If necessary, add a drop of water, but keep in mind that zucchini already contain their own, and for crispier and tastier cooking, it would be better not to add any.
Wash the cherry tomatoes and cut them into small pieces. Slice the bread and toast it, then arrange them on a plate. Pour the spreadable cheese into a bowl, add a pinch of salt, a drop of oil, and mix well.
Spread some cheese on each slice and add the tomato pieces and sautéed zucchini.
Serve the crostini with zucchini or store them in the refrigerator.
