Let’s start preparing the ossobuco in a pan. Clean the carrot, onion, and celery, then cut the vegetables into small cubes. Use scissors to trim the fat from the shanks so they don’t curl during cooking.
Place the vegetables and some extra virgin olive oil in a pan, sauté for a few minutes, then add the shanks. Brown them for 5 minutes on each side, then deglaze with white wine. Once the alcohol has evaporated, add the tomato puree or peeled tomatoes, some salt, and continue cooking for 30 minutes, occasionally turning them.
If you see that the sauce is reducing too much, add some vegetable stock or water, and serve the shanks hot.
