How to prepare eggplant cutlets in an air fryer
Let’s start preparing the eggplant cutlets in an air fryer, wash the eggplant, trim it and cut it into slices about half an inch thick.
Pour the eggs into a bowl and beat them with a fork, pour some flour into a plate and breadcrumbs into another plate.
Dip the eggplant slices first in the flour, then in the beaten egg, and finally in the breadcrumbs.
Place the eggplant cutlets in the fryer basket on which you have placed a perforated parchment paper sheet suitable for air fryer.
Spray a few puffs of oil and add a pinch of salt. Cook at 356°F for 6 minutes, then open the basket, turn the cutlets, and continue cooking for another 6 minutes.
