Flatbread pizza or piadipizza, as it’s called in Romagna piada pizza, is quick and perfect if you don’t have yeast at home or if you’re in a rush and don’t have time to let the dough rise. The first time I had pizza with a flatbread base was on vacation in Cesenatico, and when it was offered to me, I was immediately enthusiastic.   • Flatbreads without lard
  • Tomato sauce
  • Mozzarella (or provolone)
  • Cooked ham
  • Oregano
  • Extra virgin olive oil

Steps to Prepare Flatbread Pizza

  • Let’s start preparing the Flatbread Pizza. First, prepare the flatbreads if you’ve decided to try making them at home. With my recipe, you can make them without lard, using only extra virgin olive oil, so they’re lighter. Cut the mozzarella or some smoked provolone or other string cheese into cubes. Preheat the conventional oven to 350°F.

  • Place a sheet of parchment paper on the oven tray and arrange the flatbread, add the tomato sauce and spread it over the flatbread with a spoon while preserving the edges.

  • Add the mozzarella or the cheese you decided to use, cut into pieces.

  • Also add the ham and other ingredients you decided to use to top the piada pizza.

  • Drizzle with extra virgin olive oil and a generous sprinkle of oregano.

  • When the oven is hot, bake and cook for 15 minutes, then take out the Flatbread Pizza and serve hot.
