Ingredients

  • 10.5 oz fregola
  • 1 zucchini
  • 3.5 oz cherry tomatoes
  • 1 Tropea red onion
  • to taste extra virgin olive oil
  • to taste salt

How to make fregola with vegetables

  • Let’s start preparing the fregola with vegetables, wash the zucchini and cherry tomatoes, clean the Tropea onion.

  • Place a tray in the air fryer’s basket. Trim the zucchini, slice them into rounds, and place them in the tray, cut the cherry tomatoes in half lengthwise and add them to the tray, slice the Tropea onion and add it to the other vegetables. Once the vegetables are in the tray, add a few sprays of extra virgin oil, a pinch of salt, and mix well.

  • Cook at 375F for 12 minutes; the vegetables should be cooked but the zucchini and onion should remain crunchy. Once cooked, set them aside.

  • After washing and cutting the vegetables as explained above, place them on a tray suitable for baking, add salt and extra virgin oil, and bake at 355F for 20 minutes, stirring occasionally for even cooking.

  • Cook the fregola in slightly salted boiling water, following the cooking time indicated on the package, and once cooked, drain it.

  • Pour the vegetables into a pan along with the cooking juices from the vegetables, add the fregola, adjust for salt and oil, and let it thicken for a few minutes; if you like, add some grated cheese.
