FRITTATA WITH BELL PEPPERS

Frittata with bell peppers is an easy and tasty main course, baked in the oven so you won’t have to worry about flipping it. You can make it in individual portions like I did, or you can cook it in a round pan with a 7.9-inch diameter. The oven-baked bell pepper frittata is excellent whether eaten hot just out of the oven or at room temperature. To prepare it, I used half a red bell pepper and half a yellow one; alternatively, you can use one whole red or yellow bell pepper.   • Half red bell pepper
  • Half yellow bell pepper
  • 3 eggs
  • as needed extra virgin olive oil
  • as needed salt
  • as needed chopped parsley
  • 2.8 oz pizza mozzarella

How to prepare the frittata with bell peppers

  • Let’s start preparing the frittata with bell peppers. Clean the peppers by removing the seeds and internal filaments, wash them well, and cut them into small pieces.

  • Then pour them into a pan,

  • add a dash of extra virgin olive oil,

  • some chopped parsley

  • a splash of water

  • and cook for 10 minutes so the peppers soften. Then remove from the heat and transfer them to a plate or bowl to cool down.

  • Oil the muffin pan

  • and brush the edges well.

  • In a bowl, pour the eggs, a pinch of salt,

  • some pepper, some

  • chopped parsley, the

  • pizza mozzarella cubes,

  • Bake in a preheated static oven at 356°F for 15 minutes. You will see the frittatas puff up quite a bit, but once you remove the pan from the oven, they will deflate on their own. When the Frittata with Bell Peppers is ready, take it out of the oven and serve it hot or at room temperature.
