Gnocchi with pumpkin and mushrooms a simple and tasty first course, to prepare it I used potato gnocchi, you can use either homemade gnocchi or store-bought gnocchi. Alternatively, you can also use pumpkin gnocchi. As a dressing, besides the pumpkin cream, I added sautéed mixed mushrooms, you can use either fresh or frozen ones if it’s not the season for fresh mushrooms. Ingredients

  • 1.1 lbs potato gnocchi
  • 10.6 oz pumpkin
  • 1.8 oz onion
  • 10.6 oz mixed mushrooms
  • to taste parsley
  • 1 clove garlic
  • to taste salt
  • to taste extra virgin olive oil

How to Make Gnocchi with Pumpkin and Mushrooms

  • Let’s start preparing the Gnocchi with pumpkin and mushrooms. Preheat the static oven to 356°F, clean the pumpkin removing the seeds, internal filaments, and skin. Cut the pumpkin into small pieces, and place them in a baking dish. Add the chopped onion, extra virgin olive oil, and a pinch of salt, bake and cook for 20 minutes.

  • Clean the mushrooms, pour some extra virgin olive oil into a pot, add the garlic clove, mushrooms, and some salt, cook for 15 minutes stirring occasionally. At the end of cooking, adjust the salt and sprinkle with chopped parsley.

  • Pour water into a pot, bring it to a boil, add salt, and add the gnocchi. When they rise to the surface, remove them with a slotted spoon and place them in the pan with the mushrooms.

  • When the pumpkin is cooked, place it in the blender glass, add a few tablespoons of the gnocchi cooking water, and blend until you get a cream. Pour the cream into the pan with the gnocchi and mushrooms, mix everything well, add grated cheese if desired, and serve hot.
