- 1.1 lbs potato gnocchi
- 3 zucchini
- 1 clove garlic
- to taste extra virgin olive oil
- to taste parsley
- to taste salt
- 3.5 oz cooked ham (single slice)
How to make Gnocchi with zucchini and ham
Let’s start preparing the Gnocchi with zucchini and ham. Wash the zucchini and trim them. Peel the garlic clove and cut it in half.
Pour some extra virgin olive oil into a pan along with the garlic.
Using a large-holed grater, grate the zucchini directly into the pan.
Add some salt.
And some chopped parsley.
Cook for 5 minutes, stirring occasionally, and remove the garlic at the end of cooking.
Set aside half of the grated zucchini.
Place the other half in the glass of the immersion blender.
Cook the gnocchi in salted boiling water; when they float to the surface, remove them and place them in a bowl.
Cut the slice of cooked ham into cubes.
Pour a splash of extra virgin olive oil into the immersion blender glass.
Blend for a few minutes until you obtain a cream; if necessary, add a tablespoon of gnocchi cooking water.
In the pan where you cooked the zucchini, add a splash of extra virgin olive oil.
Add the ham cubes.
