Homemade vegetable broth is very simple and perfect for any preparation requiring vegetable broth. This quick vegetable broth can be used to prepare a simple soup with pasta, as a base for a creamy soup, or it is perfect as vegetable broth for risotto. I usually don’t add tomatoes when I make broth, but if you like, you can add a few cherry tomatoes. I make the vegetable broth following my grandmother’s recipe. Ingredients for making vegetable broth
- 2 qt water
- 2 carrots
- 1 onion
- 3 sticks celery
- to taste salt
- a few parsley
How to make homemade vegetable broth
Let’s start making homemade vegetable broth, clean the carrots, remove the outer layer with a potato peeler and cut off the ends. Also clean the onion and cut it in half, clean the celery sticks by removing the leaves and any tougher filaments, and also clean a few sprigs of parsley. Wash all the vegetables well
Place the vegetables in a pot and cover with 2 quarts of water, put on the stove and bring to a boil. When the water starts to boil, lower the heat and let it simmer for about an hour. At the end of cooking, remove from heat, adjust salt, and strain the broth to remove the vegetables. If desired, you can dilute the vegetable broth and use it as you prefer.
After cleaning the vegetables as described above, place them in the pressure cooker, add the water, and close the lid. Put on high heat. As soon as you hear the whistle, lower the heat and let it cook for 30 minutes.
Once the cooking time is over, turn off the heat, let the steam out, and when the safety valve lowers, open the cooker, adjust salt, strain the broth removing the vegetables, and use the broth as you prefer.
How to store homemade vegetable broth
You can store vegetable broth in the refrigerator for a week, or you can freeze it. I keep it in the freezer inside half-liter plastic bottles, and when needed, I thaw it at room temperature or in the fridge if I have more time. Alternatively, you can freeze it in ice cube bags.
