How to prepare Lemon Meatballs
We start preparing the Lemon Meatballs by boiling the potato until soft, add the ground meat in a bowl and add the mashed potato.
Add a dash of extra virgin olive oil,
the egg,
a pinch of salt
the chopped parsley,
and the breadcrumbs, mix well with a fork and then with hands to get a homogeneous and compact mixture.
Shape the meatballs to the size of an apricot, not too big, so they cook evenly and are well done inside,
then roll them in the flour.
Squeeze the juice of one lemon and set it aside.
In a pan, add the garlic, rosemary, and extra virgin olive oil, let them infuse for a few minutes,
add the meatballs
and let them brown well, do not use a fork but move the pan to make them move. Once well browned, add the grated zest of an untreated lemon,
and deglaze with the lemon juice,
add some vegetable broth,
cover with a lid and cook for 15/20 minutes, the meatballs must be cooked through.
Serve the lemon meatballs hot and accompany them with their cooking sauce.
