Light Savory Cheesecake is a delicious finger food version, perfect not only as an appetizer but also to serve at a buffet or as an aperitif, very easy to make and doesn’t even require cooking. For the base, you can use leftover crispbread, taralli, or friselle, you can vary based on what you have available. Ingredients to prepare the Light Savory Cheesecake
- 5 oz Clai Bellafesta Light Salami
- 1 cup Ricotta
- 1 Cucumber
- Salt
- Pepper
- 3 tbsps Extra virgin olive oil
- Crispbread
- 1 clove Garlic

Preparation
Let’s start preparing the Light Savory Cheesecake, clean the cucumber, remove the outer part and grate half with a fine grater, squeeze it well with your hands to remove the excess water.
Pour the ricotta into a bowl, add a pinch of salt and pepper, the grated cucumber, 3 tablespoons of extra virgin olive oil, and mix well.
Cut 4 slices of Clai Bellafesta light Salami into strips and toast them in a hot pan until crispy, remove them from the pan and set aside.
Place the crispbread in a bag and crush them with a rolling pin or meat tenderizer to create very small crumbs.
Add the garlic clove and crispbread crumbs to the pan where you browned the Bellafesta Light and let them flavor for a few minutes, stirring continuously.
Place the crispbread crumbs at the bottom of the glasses, followed by the ricotta cream and crispy Bellafesta Salami. Take a skewer, fold a slice of Clai Bellafesta light Salami into an accordion shape, and place it on top of the glass.
Keep the glasses of Light Savory Cheesecake in the fridge until ready to serve.
