Ingredients to prepare the Marbled Plumcake

  • 2 cups all-purpose flour
  • 2.5 oz sunflower seed oil
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 2 eggs
  • 3/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 cup espresso (strong and unsweetened)
  • 1/2 cup milk (or plant-based beverage)

Procedure to prepare the Marbled Plumcake

  • Let’s start preparing the Marbled Plumcake, pour the eggs and sugar into a bowl and mix with an electric whisk until the mixture is nice and fluffy. Add the vanilla extract, sunflower seed oil, and milk, and incorporate everything.

  • Now add the sifted flour and baking powder and incorporate until you get a smooth, lump-free mixture.

  • Divide the mixture into 3 parts; in one bowl, add the unsweetened cocoa and incorporate it. If it seems too thick, add a tablespoon of milk. In the other bowl, add the strong, unsweetened coffee and incorporate.
