Ingredients for Meat and Zucchini Skewers
- 1 zucchini
- 500 g ground meat
- 1 egg
- to taste salt
- to taste pepper
- 2 tablespoons breadcrumbs
- to taste parsley
- 1 potato
- 1 tablespoon grated cheese
- 2 tablespoons extra virgin olive oil
How to Prepare Minced Meat and Zucchini Skewers
Let’s start preparing the Meat and zucchini skewers. Clean the zucchini, remove the ends, wash it, and use a vegetable peeler to slice it thinly. Make sure to use a vegetable peeler or mandoline, as using a knife will result in thicker slices that won’t wrap around the meat well and may break.
Preheat the grill pan and grill the zucchini slices. Once ready, remove them and place them on a plate.
Place the ground meat in a bowl and work it with a fork to break it up. Then add the egg,
a pinch of salt and pepper,
chopped parsley,
a boiled and mashed potato
breadcrumbs and a tablespoon of grated cheese. Mix everything well until you have a homogeneous mixture. Cover the bowl with cling film and refrigerate for half an hour.
Take the meat from the refrigerator and form small meatballs the size of a walnut.
Take a slice of zucchini and wrap it around the meatball. Continue in this way until you have used up all the ingredients.
Skewer the meatballs wrapped in zucchini onto wooden skewers, placing them through the zucchini side. I used 3 per skewer.
Add some oil to a baking dish,
arrange the skewers, add a little more oil, and cook in a preheated static oven at 350°F for 30 minutes.
Meat and zucchini skewers are ready to be served.
Place the rolls in the air fryer basket and cook the skewers in the air fryer at 390°F for 20 minutes, turning the skewers halfway through.
