Meat rolls with radicchio and Passita CLAI sausage are delicious and tender, and they are also very easy to make. To create these delicious rolls, I recommend using late Treviso radicchio, which has a sweeter and more delicate flavor compared to the early variety, which is more bitter. To prepare these stuffed rolls, I used Passita sausage CLAI, a unique thin salami produced respecting the ancient recipe with the finest lean pork meats from pigs born and raised in Italy. It is the typical Romagna sausage, with a sweet and delicate taste, stuffed in natural casing. It is gluten-free with the addition of the gluten-free symbol, free of milk and derivatives, with added iodized salt. Ingredients for preparing Meat Rolls with Radicchio and Sausage
- 4 slices veal
- Passita CLAI sausage
- 1 head red Treviso radicchio IGP, late
- 50 g onion
- 50 g butter
- 4 leaves sage
- to taste flour
- 2 tablespoons extra virgin olive oil
- to taste salt
- to taste pepper

Preparation
Let’s start preparing the Meat rolls with radicchio and Passita CLAI sausage, clean the Treviso radicchio, removing the ugliest outer leaves, and using a knife, remove the torso part. Then, cut the radicchio into small pieces. Clean the onion and finely chop it. Slice the Passita CLAI sausage thinly and remove the natural casing.
Pour the onion, radicchio, and extra virgin olive oil into a pan, put it on the stove, and cook for 10 minutes, stirring occasionally to ensure even cooking. Halfway through cooking, season with salt and pepper
When the radicchio is cooked, remove it from the heat and let it cool slightly. Meanwhile, take the veal slices and cut them in half, lightly pound them with a meat tenderizer. Place some radicchio and slices of Passita CLAI sausage in the center of each slice, roll up the meat into a roll, and secure with a toothpick.
Melt the butter in a pan, add the sage leaves, and let the butter melt. Meanwhile, dredge the rolls in flour, and when the butter is melted, place the rolls in the pan. Cover with a lid and brown for 10 minutes, turning the rolls occasionally on all sides to ensure even cooking of the meat.
