How to prepare meatballs with mortadella
Let’s start preparing the meatballs with mortadella. Chop the mortadella, or if you prefer, you can blend it; I like it coarser, so I chop it with a knife.
Place the ground meat in a bowl, work it with a fork to crumble it, add the egg,
some salt and pepper,
chopped parsley,
and a boiled mashed potato, mix all the ingredients well
and then add the breadcrumbs,
the previously chopped mortadella
mix well and then knead with your hands to have a compact mixture.
With your hands, take some of the meat and shape the meatballs not too large, and store them in the refrigerator.
Pour some extra virgin olive oil in a large pan,
the tomato pulp or canned tomatoes, a clove of garlic, and some basil leaves, put it on the fire and cook for 10 minutes.
When the sauce is ready, remove the meatballs from the refrigerator and add them to the sauce,
add some water if the sauce is too thick,
adjust the salt, cover with the lid, and cook Meatballs with mortadella in sauce for 20 minutes.
Serve the meatballs with bread or polenta.
How to store meatballs with mortadella
You can store the meatballs with mortadella in the refrigerator for 2/3 days or you can freeze them for a few months.
